Fresh sweet potatoes

Sliced red onion

Sliced spring onion

Sliced garlic

Sliced chilli

Salt and pepper

Heavy based frying pan

Frying oil

Cooking skimmer



1. Peel the sweet potatoes and cut into your preferred shapes. Leave in water before cooking to prevent them from oxidizing and browning.

2. Dry the potatoes well and fry in high heated oil for 5 minutes. Don’t put too many in the oil at the same time, otherwise it won’t cook properly. Then let them dry on paper towels.

3. Fry again in high heated oil until golden brown and dry on the paper towels.

4. Sauté the red onion, spring onion, garlic and chilli in a clean pan. White wine is optional and makes a special taste.

5. Add the chips in the pan and season it with salt and black pepper.
