Salt & Chilli Chips
Spicy Chips Recipe
YOU WILL NEED:
Fresh potatoes
Sliced red onion
Sliced spring onion
Sliced garlic
Sliced chilli
Salt and pepper
Heavy based frying pan
Frying oil
Cooking skimmer
Cooker
1. Peel the potatoes and cut into your preferred shapes. Leave in water before cooking to prevent them from oxidizing and browning.
2. Dry the potatoes and fry in high heated oil for 5 minutes. Don’t put too many in the oil at the same time, otherwise they won’t cook properly. Then let them dry on paper towel.
3. Fry again in high heated oil until golden brown and dry on the paper towel.
4. Sauté the red onion, spring onion, garlic and chilli in a clean pan. White wine is optional and gives a special taste.
5. Add the chips in the pan and season it with salt and black pepper.
